Paleo Challenge

The challenge starts upon rising Monday morning July 30 and ends Wednesday August 29. On Monday through out the day during your warm-up we will be taking before pics, so no muumuu’s please.

You will also be required to keep a daily journal of your meals, snacks and beverages. Each person that participates in the challenge will be required to put in $10.00 towards the winnings!

The winner will be determined by 1) the cleanest journal (and I don’t mean the one who has the least soda or bbq sauce smeared on their pages) 2) the most noticeable changes in body composition and possibly 3) a performance test at the end of the challenge.

Any foods containing these items must be avoided:


Legumes (soy, peanuts, beans, peas)


Sugar (agave, honey)

Alcohol- all forms!

    Not sure exaclTly how to post a recipe on here…so I thought I would just add to yours as a cooment.
    Paleo coconut milk chicken:
    4 lbs chicken breast
    1 onion
    1 cup mushrooms
    1 lrg red bell pepper
    1 can coconut milk
    Olive oil, crushed red pepper,garlic,s&p
    Cut chicken into bite size pieces and marinate in some olive oil, garlic, s&p, crushed red pepper flakes.
    Sautée onions and mushrooms in some evoo (s&p to taste) add some garlic if you like…once onions are cooked add can of coconut milk and salt to taste.
    In a separate pan brown red bell peppers.
    Sear marinated chicken. Cook until done.
    Add all ingredients together and simmer a few minutes.
