The fool-proof chicken tenders!  I set out to find the easiest, healthiest way to make these bad boys. They are simple, delicious, and fun to dip.

Coconut Chicken Tenders

you will need-

Chicken breasts (I always buy the Organic from Coscto)

Shredded unsweetened coconut (the bulk section of Island Naturals is the cheapest-about 1/2 price of the packaged brands)

Eggs

Salt/pepper…or a spice of your choosing

Coconut Oil

Cut your chicken pieces into the desired size…dip in the egg and spice mixture and roll in the shredded coconut until the piece of chicken in coated. Place on the lightly oiled cookie sheet and bake in the oven for about  7 minutes on each side at 375 degrees. Or until golden! XO, Margaux
